Ingredients

For the noodle salad:

  • 2 servings of noodles of your choice
  • Two zucchini
  • 2 large carrots
  • 2 red peppers
  • 3 tender onions
  • handful of coriander
  • 100 g of peanuts

The dress:

  • 3 tablespoons tahini
  • 3 tablespoons peanut butter (or the nut butter of your choice)
  • 1 tablespoon rice vinegar
  • 2 tablespoons tamari
  • 2 tablespoons roasted sesame oil
  • juice and grated 1 lime
  • 3 tablespoons water
  • 1 tablespoon maple syrup
  • 1 clove garlic

Method:

Start by cooking the noodles of your choice according to the package instructions. While cooking, you can begin to finely chop the pepper and spring onion. Finely chop your coriander. Then spiral the carrots and zucchini. Don’t worry if you don’t have a vegetable spiralizer, you can also cut or grate them into thin, long slices.

Put all the ingredients of the noodle salad in a bowl and mix well. Leave some coriander and peanuts to sprinkle for later.

Put all the dressing ingredients in a blender. Add a good amount of salt and mix until smooth. You may need to add a little more water as you go, depending on how thick or thin you want your dressing to be.
